Crock Pot Hawaiian Chicken

INGREDIENTS
4-6 boneless chicken breasts
1 bottle Archer Farms Hawaiian Style BBQ sauce (or substitute with your favorite bbq sauce)
1 20 oz. can pineapple chunks, drained

DIRECTIONS
Place frozen chicken breasts in crock pot and cover with bbq sauce (the Archer Farms Hawaiian Style is very spicy...I substitute with a different kind) Empty can of pineapple chunks on top. Cook on high for 2-3 hours or on low for 4-6 hours. Shred chicken with 2 forks while still in crock pot. Serve over rice.
**I like to serve this with tortilla shells as well and make it into a wrap!

Sweet and Spicy Mandarin Salad

Source: Rachael Ray

Servings: 2

INGREDIENTS
1 pouch Starkist Tuna Creations, sweet and spicy (4.5 ounce)
1/4 c. celery, chopped
2 tbsp. green onions (white and green parts)
1 can mandarin oranges (11 ounces), drained
4 c. salad greens
1/4 c. crispy chow mein noodles

Optional: Asian-style dressing. The Tuna Creations pouch has a nice flavor, so the dressing isn't necessary unless you want more flavor.

PREPARATION
In a large bowl, combine the tuna, celery, onions and oranges. Add the salad greens and toss again. Top with chow mein noodles.
